Menu Monday

Monday - Pancakes
Tuesday - Chicken Parmesan Hot Dogs
Wednesday - Smoked Brats or Hot Dogs Chicken Parmesan
Thursday - Leftovers Frozen Pizza
Friday - Peppercini Beef Breakfast Scramble
Saturday - Crispy Chicken Sandwiches Peppercini Beef Sandwiches
Sunday - French Toast & Sausage Links Leftovers/Egg Sandwiches

I kept forgetting to pull things out of the freezer early enough to have them when I planned to have them. Luckily that mostly was handled by just switching meals around with something that could thaw easily in the microwave. Since we didn't have many leftovers & Anaya was over since she was out of school for conferences, we ended up having a Frozen Pizza on Thursday. The Peppercini beef was a new recipe and it was so yummy. We had leftovers of it that I ended up feeding it to my parents, brother & sister-in-law that night - one 3-4 lb roast fed 6 adults, 1 teenage girl and a toddler. It was so easy to make too. Put roast in crock-pot, add entire jar of peppercinis (including liquid) to crock pot. Cook on low for 6-8 hours. Done. We put ours on hoagie rolls with provolone cheese. Something that we will definitely have again!

Wednesday - Frozen Pizza
Thursday - Crispy Chicken Sandwiches
Friday - Bacon Cheeseburger Skillet
Saturday - Applewood Rubbed Chicken Breasts
Sunday - Leftovers

Wednesday is Halloween so we're just going to have a frozen pizza so that I'm not stressed about cooking AND getting Claire ready to Trick-or-Treat! Corn Dog Muffins are a new recipe. Justin loves hot dogs, and corn bread, and corn dogs. I've made homemade corn dogs before and they were delicious, but quite a mess. These shouldn't be messy and something a little different. Although not healthy at all.
