I am mostly caught up on Project Life, I just haven't been taking pictures of my layouts. I also haven't been ordering my pictures as regularly. I really LOVE Persnickety Prints and have ordered from them the last two times, but that means I usually save up my pictures until it is "worth it" to pay shipping.
I still have 2-3 weeks from my last order to put into my album. And I have about 2 weeks worth to prep and order. And maybe this weekend I'll have a chance to take some pictures of my layouts and start sharing them here again.
I'm also really excited to the upcoming holiday season. I'm already planning some things to do as a family - even if I have to drag family members along kicking and screaming. Although by the time I'm 8 months pregnant (in December), they should really just do what I want so that I don't hurt myself. :)
I've also been really motivated to get back into working on my Project Life 2009 album. I left off on it in May for pictures and February for posting. But I plan to start working on finishing up layouts so that I can get those pages posted as well. When I was pregnant with Claire, a lot of my "nesting" took the form of baking. Since I'm watching my carbs this time around, I'm trying to force my baking desires into other projects (cleaning, organizing, scrapbooking).

Around Here...
Working on getting caught up on Project Life. Last week I did was August 12-18, I have pictures picked for the weeks since then, but I still need to plan the layouts, resize pictures and order them.
Planning for the new baby in January and EVERYTHING that needs to be done before then.
Getting into a routine for Claire's school year.
Calling Justin on the phone from upstairs to the basement because I don't want to walk that far.
Missing carbs! My doctor told me to cut back on my carbs and I miss them so much.
Watching Burn Notice on NetFlix. Or at least I was until Justin started watching it without me. Now I've lost all desire to watch it.
Feeling the little man starting to kick...or hit...or something.

Sunday - Labor Day Party with Family
This weekend is Labor Day so Sunday we'll be visiting with my family. Our big meal will be at lunch but there will either be more food for dinner or we will be on the road heading home and we'll just pick something up. I have got to stock my freezer with some more easy to prepare meals - especially things that don't need to thaw first! Pretty much the only meat in my freezer is beef from my uncle's cow. But things involving ground beef just don't sound all that great and things involving steak take too much effort right now.

And...I'm Back...
That was a little break...for (most of June and) the entire month of July (and half of August)!
Summer has been all about being lazy this year. I haven't worked on Project Life since the middle of June. My summer fun list didn't really happen.
Claire took four weeks worth of swimming lessons. She might have learned something. She didn't drown. And I didn't go insane.
We took a 10 day vacation to Colorado. It ended up including a lovely visit to an ER because Claire came down with a cold AND two ear infections AND a little bit of altitude sickness. Actually, by the end of the trip, we had all come down with the cold. My brother & dad started it though.
We did not use our swim pass nearly enough. But it also wasn't in the upper 90s most days. Compared to last summer, this summer has been lovely.
We found out we're going to have another baby. I thought I'd just slide that in real quick like you wouldn't notice. Due in January a whole 6 days after Claire's birthday. Let's just hope they don't have the same birthday.
Apparently being pregnant makes me tired. And makes any cold that I get turn into a nasty multiple week cough. It is great fun.
Both kiddos have started school. Claire is in Pre-K again. Anaya is in 8th grade! Seriously, when did she get so old?!?

Recipe: Homemade Hot Pockets
For dinner tonight I made Homemade Hot Pockets. I made a couple different varieties using things I had on hand: Ham & Cheese, Turkey & Cheese and Pizza. Delicious.
I can't entirely claim these things, my mom used to make Taco Pockets using Grands Biscuits & Taco Meat. I've changed it up a little bit by making my own biscuit dough because it is easier to handle than Grands biscuits and I've experimented with different fillings.

This is the biscuit recipe that I used. I need to change it up a little bit and flavor the dough a bit to make it a little more savory - I think it would go better with everything. Next time I'll probably add a little onion salt or garlic or paprika or some combination of all those things. And only go through the step where you make the dough, don't actually cut into biscuits!
After you mix up the biscuit dough, divide it into 18 balls (assuming you used the full recipe for 24 biscuits). Lay them on a cookie sheet and place in the fridge or freezer to keep cold while you assemble the pockets.
On a floured surface, roll one ball out, place your filling down the middle of the dough.
Then fold both sides & the ends up and press all edges together. (it should look about like a hot pocket) Place on a baking sheet and poke a few holes in the top of it to release steam (otherwise your hot pockets might explode).
Bake at 450 degrees for 15-18 minutes - make sure all of the sides are browned. I pulled my first patch out a little early and some where a little doughy on the sides.
After baking them, you can either go ahead and eat them...or wrap in individual pockets of foil or ziploc bags, label with the type of filling and place in the freezer. To reheat, put in the microwave for about 2 minutes (or until filling is hot).

Summer Fun List
School is out and now it's time for a Summer Fun List.
This year, the list will probably be a little shorter than last year's list. This year, we have a family vacation so I won't be taking many other days off. Plus Claire has swim lessons almost every single evening. And Anaya has softball two to three evenings a week during June. So most of our activities will take place on weekends or in the second half of July & the first half of August.
