Happy Halloween

Claire was so excited to go Trick-or-Treating tonight. She dressed up like a Fairy. It is the same costume that she wore to RenFest, although I did buy a new dress & leggings to wear under the fairy skirt & wings.

She pretty much refused to have anything to do with looking at the camera. We walked around the neighborhood for about 45 minutes. While we were talking, I let Claire dictate which direction we went and which houses we went to (as long as their outside lights were on). Then her pumpkin was full enough that I kept having to carry it, so I said that we were done and it was time to take over the candy passing out duties at home.

At one of the houses we went to, there was a BIG guy and he was dressed up like Frankenstein (green skin & all). When Claire saw him through the door, she started backing up into me. I thought we might be done at that point, but then a woman that was at the house opened the door and gave her candy and Claire refused to talk and then we moved on to the next house. As we were leaving I saw Frankenstein go outside and stand in the shadowy part of their driveway to scare other trick-or-treaters. I'm glad he was still inside as we were walking up to the door - that might've freaked us both out!

Claire was quite happy with her bucket full of candy. We ended up dumping it out on the table and her first choice of things to eat was a tootsie pop. She got two pieces tonight and we'll probably continue to let her have a little bit here & there for the next few weeks. We left her school Halloween candy at Grandma's house for her to let her have during the day when she is there.

Project Life: Week 40

Week 40: October 1 - 7

I'm slowly falling behind again. Here it is the end of the month and I just finished up the spread for the first week. Oh well. I've been exploring different print options so that has kind of messed up my schedule. The prints from Target have gone down in quality...a lot...since their remodel. They changed out the printing machine. So I tried Costco, but that required my brother's help since I didn't want to buy a membership just to see if I liked their picture quality. It was also slower because it required my brother's help and well, yeah. But here's week 40 and I have the pictures for week 41 sitting on my desk (ordered from HyVee this time).

A couple of pictures of Claire playing with her toys on the table. This week Claire had to take in snack for her class - GoGoSqueeze Applesauce. My mom & I went to the American Royal BBQ competition thanks to free tickets from work.

Two inserts this week, the first one is about going to a pumpkin patch on Saturday morning. It was 45 degrees, not my preferred weather, but Claire and I went to Deanna Rose Farmstead's pumpkin patch anyways. Claire loved the haybale slide and luckily we got there at a pretty good time and left just as a big group that was having a birthday party showed up.

The second insert is just a couple of 4x6 pictures from hanging out at my mom's house on Sunday afternoon. A couple of pictures of my brother and sister-in-law. And of Claire riding her tricycle and chasing grandma on it.

I also did a lot of baking on Saturday & Sunday. I made two kinds of donuts: Apple Cider and Chocolate. Then I baked Gingersnaps on Sunday evening while Justin was carving a Tinkerbell pumpkin.

I kept forgetting to pull things out of the freezer early enough to have them when I planned to have them. Luckily that mostly was handled by just switching meals around with something that could thaw easily in the microwave. Since we didn't have many leftovers & Anaya was over since she was out of school for conferences, we ended up having a Frozen Pizza on Thursday. The Peppercini beef was a new recipe and it was so yummy. We had leftovers of it that I ended up feeding it to my parents, brother & sister-in-law that night - one 3-4 lb roast fed 6 adults, 1 teenage girl and a toddler. It was so easy to make too. Put roast in crock-pot, add entire jar of peppercinis (including liquid) to crock pot. Cook on low for 6-8 hours. Done. We put ours on hoagie rolls with provolone cheese. Something that we will definitely have again!

Wednesday is Halloween so we're just going to have a frozen pizza so that I'm not stressed about cooking AND getting Claire ready to Trick-or-Treat! Corn Dog Muffins are a new recipe. Justin loves hot dogs, and corn bread, and corn dogs. I've made homemade corn dogs before and they were delicious, but quite a mess. These shouldn't be messy and something a little different. Although not healthy at all.

Bieber Fever

I had planned to take Anaya to see Justin Bieber. I knew when the tickets went on sale way back in whatever month that was, but I was out doing something at 10am when they went on sale and by the time I got to a computer, all of the tickets were gone. So we looked at "Ticket Re-sellers" which is fancy term for ticket scalpers. And they were so expensive and it wasn't really worth it to me or Justin (my Justin, not Justin Bieber, I don't think he cared at all if Anaya came to his concert although I don't think our Justin cared at all either). And then it got closer to the concert date...and closer...and then it was the night before and there were some OK tickets for a price I would be willing to pay. There comes a point when you stop thinking "am I really paying that much for tickets to a concert" and instead consider it an experience that she will (hopefully) remember for a long long time. But Justin (my Justin) said no.

The concert was tonight. And at about 6:30pm, Anaya's friend texts her and says that that Sprint Center website had tickets available (for normal, non-scalper price)! I went upstairs to look and there weren't any tickets available anymore. But then I got to looking around and found tickets that were still over priced, but not as much as the other ones that I had seen. The concert started at 7pm, we missed the entire opening act. Carly Rae Jepson was playing her very last song as we were walking up the stairs in the Sprint Center. About 30 minutes later, Justin's part of the concert started - so at least we didn't miss any of that. And our seats were pretty good. We were in the back row of our section, but I kind of liked that there was no one sitting behind us, kicking our seats, and wishing Anaya would sit down.

As we were driving to the Sprint Center, Anaya called/texted all of her friends to tell them. They were excited for her, but they all hated her too. Their parents probably hated me too because now their kids were all irritated. The concert started and Anaya screamed. Justin came out and Anaya screamed. Justin sang and Anaya screamed. It is really quite amazing that I can hear at all. At one point, Justin asked all the audience to make some noise, and EVERYONE screamed. Then he said the Chicago concert audience was louder, and everyone screamed LOUDER.

Anaya had her experience. Now let's hope she remembers it for a long long time. Because it will take a long long time to convince me to ever do such a thing again.

The first half of last week got all messed up due to my work conference. I didn't get home until 8pm on Tuesday and 7pm on Wednesday. On Tuesday, I have no clue what Justin & Claire ate. I had some appetizers after the conference and then a piece of pizza leftover from the weekend. Wednesday, my mom fed Claire so that she didn't have to wait until I got home, so Justin got us Taco John's because we were pretty much out of super easy food. Then that just messed up the rest of the week too because when you don't cook for 2 days, there are no leftovers for the 3rd day! Saturday we ended up going out with Justin's brother & best friend for lunch to celebrate Justin's birthday, we went to Red Robin. Even though we didn't order it or get charged for it, Anaya and I all ended up with double patties on our already huge burgers. So we had plenty of leftovers to have for dinner!

Recipe: Cheesy Potato & Corn Chowder

Last week, I wanted to make Potato chowder. I have three or four recipes for potato chowder and none of them were quite what I was wanting. I knew I wanted to make it in the crock pot (out went the stove top recipe). I knew I wanted it to have bacon in it (out when the one with cream of chicken soup as its base). I thought it would be good with corn. I knew I wanted to use real potatoes in it (not hash browns). I wanted it to be cheesy (not just creamy by using half-n-half). Since none of my recipes were quite RIGHT, I ended up making up my own based on bits and pieces of each recipe. Some of my measurements are more guesstimates that exacts. For example, I put in about half a bag of frozen corn; a bag is 16 oz, so I'm calling that 8 oz in the recipe, but it could've been slightly more or less.

Ingredients

  • 8-10 Russet Potatoes (I used 8, which seemed to be about 2.5 lbs), diced into 1/4" cubes
  • 8 oz of frozen corn (about half of a 16 oz bag)
  • 1 1/2 cups of chicken broth (enough to almost cover all the potatoes)
  • 8 oz of bacon cooked to crispy, crumbled and drained
  • 1 cup Cheddar cheese (I used shredded but anything would work since it just needs to melt)
  • 8 oz of Cream Cheese (about half a 16 oz block)
  • salt & pepper to taste

Directions

Put the cubed potatoes, frozen corn and broth in the crock pot - the broth should just barely cover all of the potatoes & corn. Add the bacon and stir it all around. Turn the crock pot on low for 8 hours, or high for 4 hours. Or be like me and forget to put it on high, so leave it on low for about 4 hours and wonder why your potatoes aren't getting mushy, realize it is still on low and turn it to high for about 2 hours.

Using an immersion blender, blend up about half of it. Add cheese & cream cheese and stir around until melted. Add salt & pepper to taste - I probably used about a tsp of each. This is a VERY thick chowder which is what I wanted. You could always thin it with a little bit more chicken broth, or mlik, or half-n-half.

We had ours with homemade English Muffin bread - VERY delicious. This fed 2 adult, 3 teenage girls, one toddler and had an adult size serving leftover. So 6-8 servings depending appetites & what else you have with it.

Project Life: Week 39

Week 39: Sept 24 - 30

This week was busier than last week. A lot of just fun pictures from around the house/backyard for the main 2-page spread. Claire has been wanting to sleep in my bed recently so I included a picture of her taking up most of the bed in the morning.

The first insert is about Anaya's last softball game this year. I finally got a decent picture of her batting. Then I got a picture of Claire & Justin watching the game.

Later on Saturday we went to Hobby Lobby and stopped by the "pumpkin patch" in their parking lot. I have real pumpkin patch plans, but by the time we go, the good pumpkins might be gone and this place had some REALLY nice pumpkins.

On Sunday we weren't having lunch with my parents, so we went to RenFest.

I took this picture of me laying in bed reading and since I do this almost every night before bed, I decided to include it. I also took Friday afternoon off work and got a pedicure...I went with a Halloween theme! Claire loves Disney princesses, she had picked out these wall stickers earlier so Anaya helped her put them up on her wall.

By Thursday, we didn't have enough leftovers to have leftovers for dinner. We froze some of the Ravioli Casserole, but didn't want to deal with heating frozen leftovers. Since Justin wasn't hungry, it was just Claire & me so I made quesadillas since it was easy! Friday & Saturday were switched because the Potato Chowder is a crock pot recipe and I didn't have time to start it in the morning before leaving for work. Sunday, we were mostly out of milk which meant a run to the store before dinner which turned into going to Pizza Hut instead because I didn't want to run to the store and then come home and cook!

I also did a TON of baking last week. Anaya & her friend made Nutella Rice Krispy treats on Friday night (not really cooking, but you know). I made Pumpkin Cinnamon Rolls Friday night/Saturday morning. Then a loaf of English Muffin bread during the day Saturday to have with the chowder. Then Sunday night, I pulled my bag of frozen gingersnap dough out of the freezer and baked about a dozen of them.

Project Real Life

Over at Big Picture Classes, I am participating in Becky Higgin's Project Real Life class. Even though the layouts for these will go in my Project Life album just as an insert for the week, since this is the first week I wanted to go ahead and share a little bit about how I am putting this all together.

I haven't received the official cards from Persnickety yet so I just printed the digital ones in draft mode since I'll eventually replace these with higher quality ones. I also haven't gotten the photo pocket pages yet, but these will go into Design F pages with the right column cut off.

I made my own journaling cards in photoshop using the color from the title card. The "open" side of the card indicates which picture is associated with the text (once I write it). I'm planning to do this every week switching the border color to match the current week's title card.

Recipe: Gingersnaps

On Saturday, my sister-in-law made Gingersnaps. I didn't know it at the time, my brother told us about it on Sunday but didn't bring us any to share! So I went home and made my own batch of Gingersnaps later than evening. (And then my mom made Gingersnaps on Monday).

Since I don't particularly have a Gingersnap recipe, I searched online and found Smitten Kitchen's recipe. Since her stuff is always delicious, I decided to just use it instead of searching anymore.

I baked my cookies for about 11-12 minutes and they were just right. A little crisp on the edges but nice and chewy in the middle. Justin thought they were too crisp (he likes gooey almost under-baked cookies). I thought they were great. However, my tongue started getting tingly after having a few. Not sure if it was because of the white pepper or the fancy (expensive) ground ginger that I used. My mom didn't use white pepper in hers because she didn't have any and her's weren't quite as spicy. But she also used a different brand of ground ginger. So who knows.

I was playing with my cookies and different ways to take pictures of them and ended up with them all piled up and framed it so the stack would be on the far right of the picture...then I did this in photoshop:

Kind of fun. I think this would be fun with a recipe you are particularly known for to include in a scrapbook. Or to just use as a recipe card - print as a 6x4 and you have a pretty & functional recipe card. I just stacked them on a cloth napkin on my counter and then balanced a piece of white foam board against the cabinets behind it.

Pumpkin Hollow

On Saturday morning, when it was somewhere around 40-45 degrees and the sun was NOT shining, Claire & I went to Deanna Rose Farmstead to go to Pumpkin Hollow. Because I am super intelligent, we were the ones running around in sweatshirts instead of coats & hats & gloves. But just because you're cold doesn't mean you can't have a good time!

Claire LOVED the hay bale slide, she went down it at least 20 times. They also had some little games set up that she could play (bean bag toss, (plastic) egg rolling, etc). Since it was cold so we only stayed for about an hour. Then we got our pumpkins and rode the hay wagon back to the farmstead. I did think ahead enough to know that I didn't want to be hauling a purse around with me and just took things that I would need & would fit in my pockets (phone, keys, money, tissues) and my camera (obviously). Which was good because by the time I was walking out of there, I had two pumpkins, a bag of stuff from Children's Mercy (they were a sponsor) and a bag of kettle corn (that was lunch).

Also, the picture of Claire & me was taken using my brand new wireless shutter remote. It's a little obvious in the picture that it is in my hand if you are looking for it, but I think it'll be useful. Better than sitting it somewhere and then having to wait for the timer to go off.

Project Life: Week 38

Week 38: Sept 17-23

I barely took any pictures this week. Not sure why exactly, but most of my pictures where of the foods we ate for dinner. So no inserts, nothing terribly special, just a nice little 2-pg spread. All of the pictures on the right were taken on Sunday. This is the weekend when I bought Claire the playhouse, so I wrote a little bit about getting it for her and how much she loves it.

I think as it is getting darker earlier, I'm going to have to experiment more with photoshop before ordering pictures. I really ought to at least start running the "auto color" adjustment on ones taken inside in the evening. Not that any of these pictures are orangy, but the picture of the layout was VERY orange originally.

So excited to be almost caught up! I have the pictures printed for Week 39, I just need to get them all put in, so I'll probably post it later this week and then I really will be all caught up! Also, I really love this project. So many more pictures off of my computer since I started it.

I ended up switching Wednesday & Thursday because Claire was sick so I took her to the urgent care center and I didn't want to cook by the time we got home. On Sunday, I had forgotten to get the sausage out to thaw and I didn't feel like browning sausage, or making hash browns so I asked Justin to fry a couple of eggs for fried egg sandwiches.

Project Life: Week 37

Week 37: Sept 10-16

How awesome is it that it is October 3, and I already have most of the year's memories in a book? It seriously makes me so happy to be able to look back at pictures of things we did earlier this year and not just by sitting at my computer clicking through files, but actually sit down and look at them.

We're getting into our normal school year routine around here again. And it is already getting dark so much earlier that I notice I am not taking as many pictures during the week. One night this week, Claire and I made cookies...and ate cookies. Lots of cookies. Since Claire was enthused with Anaya's batting helmet, we saw one at Target that was on clearance for $3 so we went ahead and got it for it. It's BRIGHT pink, reminds me of a hard hat that I used to have! We also got her a toddler size baseball glove since she's always trying to shove her hand in one of the big gloves.

Week 37 (1)

Only one insert this week, entirely about Anaya's second weekend of softball. She's loving it so much. So excited that she finally got the opportunity to play a sport. And she's doing pretty good (for having no experience), she's hit the ball a couple of times, not great at catching yet, but that's more lack of paying attention to the ball than skill.

My sister-in-law is so cute pregnant. At this point, she was about 36 weeks I think. That baby is coming soon and I can't wait! I finally get to be an aunt and buy all the really annoying toys! On Sunday night, I went to check on Claire and she wasn't in her bed, finally found her sleeping in her pile of stuff animals.

Recipe: Taco Soup

Justin commented the other day that he knew it was fall because I pulled out my enamel coated cast iron dutch oven. And it's true. That thing hardly sees the light of day during the summer months because I just want to keep the house cool and eat "cool" things. I pulled it out again this week to make Taco Soup. My mom actually gave me this recipe and I think she got it from WeightWatchers. I'm not sure how closely this follows the original recipe, but this is how I make it. It's kind of like taco chili, although this time it didn't have much broth which was unusual.

Ingredients

  • 1 lb Ground Beef or Turkey
  • 1 clove garlic, minced
  • 1 can of Corn, drained
  • 1/2 onion, diced
  • 1 package of Ranch Dressing mix
  • 1 package of Taco Seasoning (I used Penzy's Taco Blend this time)
  • 3 cans of Beans (Pinto, Great Northern, Kidney) drained & rinsed
  • 1 can diced tomatoes
  • 1 can mild Rotel (drained if you like less spice)

Directions


In a large dutch oven (or whatever you have, I've made it in a 12" skillet before), brown the ground beef/turkey and drain.

Add the garlic, corn and onion to the meat and cook for a few minutes

Add the ranch mix and the taco season, stir until dissolved

Add the beans, tomatoes and Rotel. Simmer for about 20 minutes (or more, it's like chili, the longer it simmers the more flavorful it is, okay there is probably a limit on that, but you know what I mean).

We like to top ours with a little bit of shredded cheddar. I like adding some sour cream, but our sour cream was...not good. It's also good with corn bread, but I was lazy so we had saltine crackers.

Project Life: Week 36

Week 36: Sept 3 - 9

This was another busy busy week. Anaya had her first softball game this week. We went to the Old Settlers Day festival/carnival in Olathe. We went Apple Picking. And all of that actually happened within about 26 hours. Wow.

I had a little fun with getting a new phone this week. I was going to get an iPhone, but then (after getting it) figuring out some limitations the iPhone 4S has on the Sprint network - ended up returning it and getting an HTC EVO 3G LTE. The Monday here, was actually Labor Day, but I wasn't feeling well so we mostly hung out at home playing with our respective electronic devices (Claire: iPad, Anaya: Computer, Justin: Cell Phone, Jenni: Cell Phone).

Week 36 (1)

I ended up with two inserts this week. The front of the first insert is about Anaya's first softball games. There is journaling on the picture of the three girls running away from the camera, but since it had team information I blurred it out.

The back of the first insert has pictures from Olathe's Old Settler's Days festival. After Anaya's softball game, she asked if we could go. I was going to say no, but then I said okay for a little while, and then since the ride lines were so long, I ended up taking Anaya back up there after Claire went to bed. Then I stood around and watched Anaya to make sure nothing bad happened - because crazy things have been known to happen at festivals, even in KS. And I ate a giant piece of Chocolate Covered Cheesecake on a Stick all by myself and it was delicious.

Week 36 (3)

The front of the second insert is about our Sunday morning trip to the Apple Orchard to pick apples. I didn't really include much text, just a few of my favorite pictures.

The back of the second insert if just some pictures from playing in the backyard on Sunday afternoon. I love the picture of the hot air balloon flying overhead. I had my dad's telephoto zoom lens so I could get that really awesome close-up of it. Claire loves hot air balloons, so we spent a lot of time running around the house looking at them (there were actually a few flying around that night).

Week 36 (6)

The rest of the layout is just random pictures. Claire's first dentist appointment was on Saturday morning. Also, Saturday was a wee bit busy 1) Claire's dentist appointment, 2) go to Sprint Store to exchange phone, 3) Anaya's softball game (5 HOURS including driving there & back), 4) Old Settler's Days, 5) Dinner & put Claire to bed, 6) More Old Settler's Days (until 11pm!).

RenFest

Last weekend we went to the Kansas City Renaissance Festival. RenFest is one of those things that I lived perfectly happily without for years and years and years. It truly did not even occur to me to go. Until Anaya wanted to go and that was two years ago. So this is our third year going to RenFest and I could still probably live without it, but Anaya likes it and sometimes you do things for the kids that you personally could live without. Plus on scale that weighs the kids enjoyment versus the painfulness to me, this one is definitely more enjoyable for the kids that it is painful for me. (Worlds of Fun is currently more heavily weighted on the painful to me side which is why regardless of how much Anaya has begged we still haven't gone. I'm mostly hopeful that someone else will take her and I won't have to.)

We all had a pretty good time. I was done way before Claire or Anaya were done, but that's probably because I was the one that kept having to pay for everything. And wrangle the toddler. One funny thing did happen while we were there...the children grew tails! Very strange.

And Claire loved the fairy garden. She has all the sudden become interested in TinkerBell & fairies. We've watched TinkerBell movies, we've read TinkerBell books. Now she is saying that she wants to be a Fairy for Halloween instead of Doc McStuffins like we've been talking about.

I probably could've let the kids ride more of the rides. Anaya rode the Crow's Nest by herself and then again with Claire. I was just hesitant to put Claire on them. But oh well, we had fun and spent more money than I meant to, but that's what RenFest is for...right?!?!

Menu Monday

Monday - CrockPot Pizza Soup
Tuesday - Mexican Chicken Parme
Wednesday - Black Pepper Chicken
Thursday - Leftovers Hot Dogs
Friday - 3 Meat Pizza (Sausage, Pepperoni & Beef)
Saturday - Steak & Potatoes
Sunday - Pancakes Sandwiches

The only change we ended up making was on Thursday we didn't have enough leftovers for all of us so we had Hot Dogs. Which I had actually bought to have next Friday, but Justin saw them and wanted them, so yeah. On Sunday we went to RenFest for 4 hours and then I didn't want to do anything but sit down.

Monday - Creamy Chicken Penne
Tuesday - Taco Soup
Wednesday - Meatball Subs
Thursday - Leftovers
Friday - Frozen Pizza
Saturday - Meatloaf
Sunday - Breakfast Casserole

My work has an event on Friday night, so Justin is on his own with Claire which is why the dinner plan is frozen pizza - it would've been hot dogs, but whatever, I won't be there anyways! I'll probably post the recipe for the Taco Soup or the Creamy Chicken Penne sometime this week.
